Persimmons
I came upon this unusual fruit and decided to try it out. I was pleasantly surprised and went back to the store to purchase more…enough to freeze dry a quantity of them.
Persimmon is a small, orange fruit that resembles a tomato. It does have some astringent qualities and best consumed when its ripe. It is originally from Asia, but you can find it growing in southern states. Persimmons are a good source of Vitamin A & C as well as potassium.
Persimmons can be eaten raw or cooked. I did like the flavor they added to my smoothies. However, my favorite way to eat them was in baked goods. I substituted them in this banana bread recipe and was very pleased with the results. https://foodbymars.com/easy-banana-bread-aip-coconut-free/
